Selai Srikaya

Bahan

1. santan dari 2 butir kelapa (jangan dicampur air)
2. gula pasir, sebanding atau kurang dari volume santan (misal: santan 2 gelas, gula pasir juga 2 gelas; kurangi jumlah gula pasir jika tidak ingin terlalu manis)
3. 10 butir kuning telur ayam (boleh saja tambahkan 2 atau 3 buah putih telor). 
4. 2~3 lembar daun pandan (disimpul)
5. 1 sdm mentega cair (untuk memperindah warna)
6. 1/4 sdt bubuk vanili (optional)
7. air untuk men-tim secukupnya



Cara membuat

1. campurkan semua bahan (kecuali mentega cair), masukkan dalam wadah tahan panas (dari stainless steel or enamel)
2. didihkan air di atas wajan. tim bahan (dengan wadah) di atas air dengan api kecil, sambil diaduk perlahan-lahan secara rutin sampai matang (kurang lebih 45~60 menit)
3. tambahkan mentega cair sambil diaduk rata saat akan matang.
4. tambahkan gula jika terasa kurang manis (sesuai selera)
5. angkat dan dinginkan setelah matang (warna berubah kecoklatan dan tercium bau wangi).
6. simpan dalam wadah gelas/plastik bertutup, tahan untuk kurang lebih 1 minggu. Bila disimpan di kulkas, dapat bertahan 2~3 minggu.



Note

  • selai srikaya bahan dasarnya santan dan telor. gak ada hubungan langsung dg buah srikaya. konon katanya baunya mirip.. apa benar yah? (*belom pernah makan buah srikaya*)
  • selai srikaya yang dijual di pasaran biasanya lebih kental karena bercampur tepung terigu.
  • boleh menggunakan santan instant, namun hasilnya tidak seenak dengan santan asli.
  • cocok dimakan bareng roti tawar atau nasi ketan. biasanya bila dimakan bareng nasi kentan, srikaya akan lebih cair (pada proses pembuatan, pada bahan boleh ditambahkan sedikit air)
  • sori, fotonya masih dari internet. soalnya gak nemu kelapa parut di sini. ntar deh, pakai santan instant kalo nemu di supermarket. di sini juga gak ada daun pandan .. *sigh* .. !

disappointing donut and layer cake

finally i could find a donut and kue lapis’ (layer cake) here in Hefei. I found it in Cai Die Xuan 采蝶轩 bakery, just near to my apartment. I think it's quite a famous bakery franschise store in Hefei. Honestly, there is no real delicious cake or bread I could found at Cai Die Xuan! Even a small bakery in Margonda Depok-Indonesia (e.g. Daniel Bakery) has much much better taste! And needless to say if I compare it to Bread Talk.

Back to the donut story !
I could feel the frying oil on the first bite. The chocolate was too sweet and not tasty at all. In a whole, it's awful! i wont buy it anymore!

I took me 2 days to eat the donut. It's true!
Usually i could eat a donut with similar size, within 3~5 minutes. When office time was almost over the next day, there was still 1/4 part of it. Finally i decided to throw it away.. oops.. sorry .. it became 'mubazir' (waste) ! I couldn't take it anymore!

I should have been aware actually !

And for the layer cake, ok...ok... not as bad as the donut. but I hadnt expected too much anymore. And indeed it tasted not better than the worst Indonesian layer cake I'd ever had. So forgot about Chinese bakery! hahahaha... ! but i have no idea about bakery in bigger city like Shanghai, Guangzhou, Beijing, or others.

wait .. there were 2 kinds of cake which is quite ok in Hao Li Lai bakery (好利来Holliland). It's kinda similar to black forest. Or if you want better taste, buy the cake from Novotel, Sofitel or Hilton hotels. It tastes good, with much expensive price for sure!
